Sambal Terasi Mangga Muda

Sambal terasi is a Sundanese (West Javanese) staple. This variation is made with green mangoes, which add a sweet and sour aromatic flavour to the sambal. A popular variety of sambal terasi with gandaria fruits (Bouea macrophylla) inspired this recipe, you can have the sambal as a dip or great as a topping for grilled meat / fish / vegetables.
